THE WOOD
THE DOMECQ COOPERAGE SELECTS ONLY THE FINEST EUROPEAN AND AMERICAN OAK FOR ITS CASKS.
ALL WOOD IS SOURCED FROM SUSTAINABLE FORESTS. ONLY TREES WHICH HAVE ADEQUATE TRUNK DIAMETER AND HEIGHT, AND A SINGLE STRAIGHT TRUNK ARE SELECTED.
THE WOOD IS THEN PATIENTLY DRIED IN THE ELEMENTS FOR 18 MONTHS, ROTATING IT EVERY SO OFTEN TO ENSURE EVEN WEATHERING.

CHARRING & TOASTING
THE LENGTH OF TIME OF CHARRING, INTENSITY OF THE FLAMES, AND TEMPERATURE OF THE FIRE CAN ALL BE ADAPTED TO YOUR NEEDS.
THE DOMECQ MASTER COOPER CAN ADVISE THE BEST STRATEGY, DEPENDING ON THE DESIRED FINISH.
LIGHTLY TOASTING THE WOOD GIVES DELICATE VANILLA TONES, MEDIUM LENDS HONEY AND NUT FLAVOURS, AND HEAVY CHARRING BREAKS DOWN THE TANNINS AND CREATES CARAMEL NOTES.

THE SEASONING
ONCE YOUR CASK HAS BEEN METICULOUSLY CRAFTED, IT IS SEASONED AT THE LOCAL BODEGA, FOR ONE TO TWO YEARS.
DOMECQ HAVE THE HIGHEST QUALITY SHERRY, OF ALL VARIETIES, AT THEIR DISPOSAL. DEPENDING ON THE SHEERY USED, NOTES OF CITRUS, SPICES, NUTS OR CHOCOLATE, MAY BE ABSORBED BY THE CASK, AND ULTIMATELY BY THE FINISHED WHISKEY.
OTHER SPIRITS MAY ALSO BE USED TO SEASON THE CASK IF DESIRED.
